Some of my favorite recipes of my mother’s growing up were the ones that contained anything chocolate. If any of you have made it out for a clinic at our ranch at The Double Horn, chances are you may have had my Mother’s cookies. For those of you who haven’t experienced a clinic here with our homemade meals, or for the working wife whose Cowboy husband loves chocolate… this recipe is sure to be a hit.
WHAT YOU NEED:
4 Packages Andees Chocolates
Brown Sugar
Chocolate Chips
Nuts
STEP 1:
Melt 3/4 cup of butter, 1.5 Cups Brown Sugar and 2 Cups of Chocolate Chips in a Double Boiler or Microwave. Set aside to cool.
STEP 2:
Aerate into mixing bowl 2-1/2 Cups of Flour. As an option, you may add chopped pecans or walnuts here as well.
STEP 3:
Add 2 Eggs and 1-1/4 Teaspoons of Baking Soda to the cooled chocolate mixture. From here, thoroughly mix to combine chocolate and flour mixtures.
STEP 4:
Refrigerate for one hour.
STEP 5:
Ball onto parchment with middle size scoop. Bake at 350 for 9 minutes.
STEP 6:
Remove from oven and while hot, place an andees mint over each cookie. When melted, frost cookie with frosting of your choice.
